Paint Remove for Delicate Wood

I have some beautiful wood on the windows, doors and trim and would love to get it all up, but I am worried that when I take it up I will ruin the decorations that are in the wood, it is like a little edge indent around the doors. My friend told me to use a chisel but I worry that would ruin it I would use a steel sponge but I still worry about rubbing too hard and ruining it. Any Ideas?

Do you think its ok if ever you ruined some areas of the wood to apply some wood stain effect to cover up those areas?

I am very particular and would prefer not to ruin any of it but if I did and stain would cover it I would try. I just want do as little damage as I can to it rather it be with a scraper or whatever.
